A Michelin star chef will be co-hosting a dinner at The Pompadour in Edinburgh next week.
Rupert Rowley, former head chef of Fischer’s at Baslow Hall, a country house hotel and restaurant in Derbyshire for 17 years, will travel north to work with head chef Daniel Ashmore on Thursday, 27 June.
Rupert is the penultimate guest chef to visit the Waldorf Astoria Edinburgh’s fine dining restaurant as part of a pop-up programme that has been taking place over the past few months. He will be joining forces with Dan on the night and together they have designed alternate courses, as part of a summer influenced five course tasting menu.
The menu has been created to reflect the flavours of summer, as well as different culinary styles influences that have inspired each chef.
Highlights from the menu, featuring Rupert’s dishes for the evening include:
· Tempura of Norfolk quail, toasted seeds, Teriyaki jelly
· Lemon sole, crispy onions, grilled leeks, mussel and vermouth sauce
· Pistachio sponge, strawberries and honeycomb parfait
Rupert was classically trained as a chef at the beginning of his career and while this has formed the foundations of his cooking, he is a great believer in combining these with today’s modern techniques and influences.
Although he is taking a break from running restaurants on a daily basis, he is currently working with a specialist ingredient company, MSK as their development chef, encouraging molecular gastronomy to be integrated into courses offered by universities and colleges to help bridge the learning gap for future talent entering the catering sector.
Rupert said: ‘It’s been several years since we were last in the kitchen together and I’m very much looking forward to joining Dan for an evening to create a fine dining experience that will weave together our styles, whilst illustrating our joint ambition to showcase modern British cuisine.’
Dan Ashmore, head chef at The Pompadour, said: ‘Sharing an evening will bring back lots of memories for both of us. Rupert played an instrumental role at the start of my chef career when he took on a fresh faced 17 year old whilst still at college and provided invaluable experience at Fischers. This gave me the experience and confidence to springboard to London and onto where I am today.’
The fifth and final gastronomic experience to take place will be Michelin-starred Paul Welburn from the Oxford Kitchen on 31 July.
