Andy Turnbull is the head chef at Inverlochy Castle.
He first took up the post in January 2016, and presents a recipe for Scottish Field readers to try for themselves.
He added: ‘The best thing about working at Inverlochy Castle is the location.
‘We have some of the best produce in Scotland. Shellfish and seafood especially. Being head chef with the Roux brothers is really something for me. The Castle has an excellent reputation, so being head chef here is a big thing for me.
‘I write the menus, send them away and get everything approved, but I have control over what goes on there.
‘I have a great fish man – he phones me when he’s on the way home from Peterhead market to tell what he’s got. He also has shares in a boat, so we get the biggest and best langoustines. It’s all about having good relationships with small suppliers and bigger ones like Campbells too.’
